We saw a watermelon ice sicle on the web, and thought it was a great idea for using something healthy like fruit, to make a treat for kids and grown-ups alike. Our version of this treat has a sweet, slightly tart flavor by combining fresh watermelon and lemonade. And, it was easy to make, too!
When we were kids, we loved when our Mom gave us a cold Popsicle on a hot summer afternoon. It’s amazing how they are still a favorite – generation, after generation. This watermelon lemonade frozen pop recipe makes a cool treat for the kids on a hot summertime afternoon, and it’s not just for kids – you’ll love it, too, and we know that for a fact because we did a taste test! Two thumbs up!
This recipe is the answer to ‘what am I going to do with all that left over watermelon in the frig?’. And, making these frozen pops is a good way to get the healthy nutrition of watermelon, because they’re made with all of the red pulp.
For this recipe we used one-half of a small (about 7” diameter) seedless watermelon, which produced about 3 cups after it was pureed in the food processor.
Watermelon Lemonade Frozen Pop Recipe
(Makes approx. 8 )
1/2 small seedless watermelon (about 7” diameter)
3 cups fresh or prepared frozen lemonade
Scoop out the red pulp from the watermelon half with a spoon, and place in a food processor or blender. Usually, seedless watermelons do not have the large dark seeds that regular watermelons have, but it seems there are always a few that turn up. Remove the dark hard seeds before pureeing. We didn’t remove the small white seeds that seedless watermelons typically have, but you can remove them if you think it is necessary.
We pureed half of the watermelon pieces at a time in the food processor. You could do more, or less, at one time, it just depends on the size of the appliance.
Using a blender or food processor with a deep bowl will help reduce leaks when pureeing. Be sure cover bowl before pureeing – the watermelon juice will splatter!
The watermelon reduces to a slightly pulpy liquid. Pour watermelon puree into another bowl, and puree the remaining watermelon pieces. Pour this in the bowl, too.
Measure half watermelon puree and half lemonade into a container with a spout, and stir to blend. We used a 1:1 ratio.
Pour into the prepared frozen pop containers, and place in freezer.
If you serve them outside, place them on top of a bowl of ice cubes or crushed ice to help keep them from melting too quickly.
